Bí đỏ xào – A simple, healthy and colourful no-meat dish that has always been one of my favourite. Learning how to make mashed pumpkin with garlic from my dad, I am pretty sure that he was not the first and would not be the last person to teach this dish to his children.
Why do I like it? I would quote my dad here:
“You sauté the garlic, watch them turn brown, and these tiny little pieces will bring a shrimp-like flavour to your pumpkin that makes your mouth watering later.”
A couple months ago I had a chance to try the Afghan Sweet and Savoury Braised Pumpkin (Bourani Kadoo) which is a bit similar to the dish my dad made for us. However, the Vietnamese style one is still my go-to recipe because we use fish sauce – and the Vietnamese in me cannot say no to that.
Now, let’s make some bí đỏ xào! Here is what you need 📜:
– a piece of pumpkin or butternut squash (i normally get 300gr – you can save them for lunch if you can’t finish it all in one go) – peeled, then cut into small pieces– 2 cloves of garlic – well-chopped– 2 tbsp of oil– salt, fish sauce, pepper– spring onions for garnish
and this is how we do it🥢:
1. Heat 2 tbsp of your favourite oil (I use vegetable oil) in a pan/ pot of your choice. When the oil is ready, start frying your garlic until it turns golden brown and has a distinctive garlic smell.2. Add the pumpkin and keep stirring on medium heat until the pieces are well coated by the garlic oil for approx 5 mins (can be more or less, depends on the type of pumpkin and the size of your pumpkin piece)3. Add in some water – normally 1/3 cup. But this totally depends on how thick you want your pumpkin to be. The less water you add, the thicker the mashed pumpkin will be. Cover and let it simmer until the pumpkin gets soft (stirring occasionally to mash the cooked pumpkin and prevent it from sticking to your pan)4. Add in 1 tsp of fish sauce, salt and pepper to taste (totally up to you – some like it sweet, some like it salty)5. Garnish with chopped spring onions, you can eat the mashed pumpkin on it own, or with some rice. Whichever way you prefer. 🎃🎃🎃
